As the brittle nears its perfect golden stage, we stir in cocoa nibs—just at the right moment—infusing the candy with deep, rich chocolate flavor. Each batch takes over an hour and demands constant care and attention. There are certainly faster ways to make brittle, but there's something about this vintage method that just feels right—and tastes even better.
Our cocoa nib brittle is made using light roasted cocoa nibs from the Dominican Republic. Lightly roasted cocoa nibs cook along with the brittle, infusing cocoa goodness throughout.
