Amy's Famous Chocolate Chunk Cookies

These cookies have been a hit with family and friends for years.  We've adjusted the recipe along the way to create our favorite slightly crunchy, mostly chewy, chocolaty goodness cookies!

Preparation time: 10 minutes      Baking time: 10 minutes

INGREDIENTS

2 eggs
1 cup shortening
¾ cup granulated sugar
¾ cup packed brown sugar
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
½ tsp. salt
8 oz. Fresco chocolate medallions

DIRECTIONS

Preheat oven to 325 degrees (F). Cream together eggs, shortening, sugars and vanilla until fluffy. Add remaining ingredients just until blended. Do not over mix.
Scoop on cookie sheets. Bake for 10 minutes.
Makes 3 dozen
