Chocolate Peppermint Cookies

One day Amy thought "hmmmm, I wonder what putting our peppermint drinking chocolate in cookies would taste like?" The taste testers deemed it "DELICIOUS" and "AMAZING"!  Then asked "When are you making more?"

These cookies taste like a peppermint brownie, while having a crunchy and chewy texture.  These are the perfect treat for any peppermint lover!

Preparation time: 10 minutes    Baking time: 10-15 minutes

INGREDIENTS

2 eggs

1 cup shortening

¾ cup granulated sugar

¾ cup packed brown sugar

3 tsp. vanilla

1 ½ cups flour

1 tsp. baking soda

½ tsp. salt

½ cup Fresco Peppermint Drinking Chocolate mixture

Your favorite Peppermint crumbles (as desired)

DIRECTIONS

Preheat oven to 325^o.  Cream together eggs, shortening, sugars and vanilla until fluffy.  Add remaining ingredients just until blended.  We added a couple of handfuls of crumbled peppermint before mixing. Do not over mix.

Scoop on cookie sheets.  Sprinkle with peppermint crumbles. Bake for 10 - 15 minutes.
